Flourless chocolate and almond cake from Capri is dense, fudgy, and naturally gluten-free. This beloved mediterranean dessert is a family favorite for its rich simplicity.
Preheat oven to 350°F. Grease a 9-inch round cake pan and line the bottom with parchment for easy release.
Melt semisweet chocolate and unsalted butter together in a heatproof bowl set over gently simmering water, stirring frequently until smooth. Allow to cool slightly.
Finely grind blanched almonds in a food processor until you have an even, sand-like texture. Do not overprocess into paste.
In a large bowl, beat eggs with granulated sugar and kosher salt on medium-high with a mixer until thick, pale, and doubled in volume, about 5 minutes. Mix in vanilla extract.
Fold the melted chocolate-butter mixture into the whipped eggs gently, followed by the ground almonds, mixing just until incorporated to maintain volume.
Pour the batter into the prepared pan. Bake at 350°F for 32–38 minutes, until the top has set but the center remains moist; a toothpick should come out with a few moist crumbs. Do not overbake for best fudgy texture.
Let the cake cool completely in the pan on a rack; it will settle and firm as it cools. Invert onto a plate, peel away the parchment, and dust the top with powdered sugar before serving.
