Add the frozen green peas and vegetable broth. Increase heat to high and bring to a gentle boil, then reduce to a simmer. Cook for 7–8 minutes, until peas are bright green and tender.
Add the baby spinach, fresh mint leaves, lemon juice, kosher salt, and black pepper. Simmer for 2 more minutes, just until the spinach wilts and mint becomes fragrant.
Carefully transfer the mixture to a blender (in batches if necessary). Blend on high for 1–2 minutes until very smooth. For the silkiest shooters, strain the soup through a fine mesh sieve into a large bowl.
