Flaky sopapilla cheesecake bars with cinnamon-sugar crescent dough and creamy cheesecake filling are an easy, family-favorite dessert. This Tex-Mex-inspired treat comes together quickly and disappears even faster.
Preheat oven to 350°F. Lightly grease a 9x13-inch baking dish with butter.
Press one sheet of crescent dough into the bottom of the prepared dish, stretching to fit and pressing seams together.
In a bowl, beat the cream cheese with granulated sugar and vanilla extract until smooth, then mix in the egg until creamy.
Spread the cheesecake filling evenly over the dough layer. Place the second crescent dough sheet over the filling, pinching seams as needed.
Melt butter and brush evenly over the top dough. Stir ground cinnamon with 2 tbsp sugar, then sprinkle mixture across the surface. Bake for 30–35 minutes until golden and puffed. Cool completely before slicing into bars.
