Crack the eggs into a bowl and whisk lightly with the kosher salt and black pepper until just combined.
Chop the epazote leaves finely. Dice the white onion into small, even pieces.
Heat the olive oil in a nonstick skillet over medium heat. When shimmering, add the diced onion and sauté for 2 minutes until translucent but not browned.
Add the chopped epazote to the onions and stir for 30 seconds, just until fragrant; do not let the epazote brown.
