Clean pig feet thoroughly: soak in cold water for 30 minutes, then rinse. Blanch pig feet in a pot of boiling water for 5 minutes to remove impurities; discard water and rinse pig feet again.
In a large stockpot over medium-high heat, add pig feet, peanuts, ginger, scallions, and water. Bring to a rolling boil.
Reduce heat to low, skim off foam, add Shaoxing wine, then cover and gently simmer for 2.5-3 hours. Stir occasionally and check water level, adding more hot water if needed to keep ingredients submerged.
Once pig feet are very tender and soup is creamy-white, remove ginger and scallions. Season with salt and white pepper. Simmer uncovered for another 20 minutes to concentrate the flavors.
