Crispy, spiced, and utterly delicious, Puchka is a classic Indian snack loved across the country. This vegetarian favorite is perfect for family snack time, parties, and festive occasions.
Combine semolina, all-purpose flour, baking soda, and a pinch of salt in a bowl. Gradually add water and knead to form a firm, smooth dough. Cover and let it rest for 25 minutes.
Roll the dough very thin and cut out small discs (about 1.5 inches). Keep the dough discs covered with a damp towel to prevent drying.
Heat oil in a deep pan over medium-high heat. Drop in the discs, 3-4 at a time, and fry while pressing gently until they puff up and turn golden brown. Remove and drain on paper towels.
Mash the boiled potatoes and combine with chickpeas, onion, cilantro, roasted cumin powder, black salt, chaat masala, and chili powder in a bowl to make the Puchka filling.
In a separate bowl, mix tamarind pulp, sugar, a pinch of salt, and extra roasted cumin powder with water to prepare the tangy Puchka water. Chill before serving.
To assemble: Gently crack open the top of each puri, fill with the potato-chickpea mixture, and dip into or fill with the chilled tangy water. Serve immediately for maximum crispness.
