Corn tortillas folded around melting cheese and griddled until golden on a comal. This vegetarian antojito is a quick, family-friendly snack that highlights the simplicity of Mexican cooking.
Preheat a comal or large nonstick skillet over medium heat for 2–3 minutes, until hot but not smoking.
Brush both sides of each corn tortilla lightly with vegetable oil for even browning.
Place tortillas on the hot comal, heat for 15–20 seconds each side until pliable, then remove to a plate.
Add 3 tablespoons of shredded cheese to one half of each tortilla, fold over to create a half-moon shape, and gently press.
Return folded tortillas to the comal; cook 2–3 minutes per side over medium heat, pressing lightly until cheese fully melts and the outside turns golden with small brown spots.
Immediately sprinkle with a pinch of sea salt after griddling, and serve hot.
