Place ground pork and ground beef in a large mixing bowl. Finely mince the garlic cloves, then add them to the meat.
Season the mixture with salt, black pepper, and nutmeg. Using clean hands, gently but thoroughly mix until evenly combined. Do not overwork to maintain a juicy texture.
Divide the mixture into 4 equal portions. Shape each into thick, rustic patties—about 1 inch thick for best moisture retention.
