Preheat oven to 375°F. Line a baking sheet with parchment for easy cleanup.
Slice zucchinis in half lengthwise and scoop out the centers, creating boats. Arrange on the prepared baking sheet.
Heat olive oil in a skillet over medium heat. Add diced onion and garlic, sauté for 3 minutes until translucent.
Add ground turkey to the skillet, cooking and breaking up with a spatula over medium-high heat for 6 minutes until fully cooked.
Stir in diced tomatoes, oregano, basil, salt, and black pepper. Simmer on medium heat for 3 minutes until mixture is thickened.
Fill each zucchini boat evenly with the turkey-tomato mixture. Drizzle lightly with remaining olive oil if desired.
Bake stuffed zucchini in the oven for 20–25 minutes until the zucchini is tender but still holds shape.
Let rest for 3 minutes before serving to allow flavors to settle and moisture redistribute.
