Shahi Paneer Festive is a treasured Indian confection that brings sweetness and joy to every celebration. This traditional dessert is lovingly prepared for family festivals, religious occasions, and special moments.
Cut paneer into 1-inch cubes and soak them in warm water with a pinch of salt for 10 minutes to keep the texture soft while preparing other ingredients.
Heat 2 tbsp ghee over medium heat in a heavy-bottomed pan, add cashews, raisins, and almonds. Sauté until the nuts turn golden and raisins plump, then remove and set aside.
In the same pan, add milk and heavy cream. Bring to a gentle simmer over low heat, stirring constantly to prevent sticking or scorching the milk.
Add the soaked paneer cubes to the simmering milk mixture. Cook on low heat for 8–10 minutes, allowing the paneer to absorb the flavors but not overcook.
Add sugar, cardamom powder, and saffron. Stir and continue simmering for 8 more minutes until the mixture thickens slightly—be attentive to prevent the milk from boiling over.
Return the sautéed nuts and raisins to the pan, add rose water, and mix gently. Simmer for 2 minutes, then turn off the heat and let rest for 10 minutes before serving to meld the flavors.
