Silky, aromatic, and comforting, Shavige Payasa is a traditional Indian milk-based dessert loved by all ages. This family favorite is a festive essential at Diwali, Eid, and special gatherings.
Heat 2 tbsp ghee in a wide pan over medium flame until it shimmers.
Add 1 cup vermicelli and sauté, stirring frequently, until vermicelli turns golden brown and aromatic, 3–4 minutes.
Pour in 4 cups whole milk and bring to a gentle simmer, stirring occasionally to prevent vermicelli from sticking or clumping.
Add 0.75 cup sugar and 0.5 tsp cardamom powder, stirring well to dissolve completely; continue simmering for 12–15 minutes until the mixture thickens and vermicelli is tender.
In a small skillet, sauté 3 tbsp cashews and 2 tbsp raisins in 1 tsp ghee until cashews turn golden and raisins puff up, then add to the cooked payasa, mix gently, and simmer for another 2 minutes before serving warm or chilled.
