A fiery, fruity salsa made from Yucatán's legendary habanero peppers. This vegetarian, fresh condiment brings intense heat and tropical flavor to adventurous family meals.
Halve the Roma tomatoes and white onion. Place tomatoes, habanero peppers, and onion on a dry preheated skillet over medium heat.
Char the vegetables, turning occasionally with tongs, for 6–8 minutes until the skins are lightly blistered and softened.
Transfer the charred tomatoes, habaneros, onion, and garlic clove to a blender or food processor. Allow them to cool for 2 minutes to prevent steam buildup.
Add fresh lime juice, salt, and olive oil to the blender. Pulse in short bursts for a chunky texture, or blend longer for a smooth salsa.
Taste and adjust seasoning, adding more salt or lime juice as needed. Let the salsa rest for at least 10 minutes at room temperature before serving to develop the flavors.
