Cloud bread is basically eggs and cream cheese whipped into bread form. Use it for an egg sandwich and you've got a low carb lunch that feels like real bread.
Preheat the oven to 300°F and line a baking sheet with parchment paper.
Separate the 3 eggs. Whip the whites until stiff peaks form, ensuring the bowl is clean and dry for maximum volume.
In another bowl, mix the yolks with cream cheese, baking powder, and a pinch of salt until smooth.
Gently fold the whipped egg whites into the yolk mixture, taking care not to deflate them.
Spoon the mixture onto the baking sheet, forming 4 even circles. Bake for 18–20 minutes until golden and set.
While baking, hard-boil the 2 eggs for filling: Place eggs in boiling water and cook for 9 minutes, then cool and peel.
Assemble the sandwiches: Layer a cloud bread round with lettuce, sliced hard-boiled egg, salt, and pepper, then top with another round.
