Gently clean the squash blossoms by removing stems and stamens; set aside on a kitchen towel to dry.
Slice the onion thinly and the poblano chile into strips; finely chop the epazote leaves.
Heat olive oil in a large skillet over medium heat. Add sliced onion and sauté for 3–5 minutes until translucent, stirring frequently.
Add the poblano chile and a pinch of salt; continue to sauté for another 3 minutes, adjusting heat to prevent burning.
Increase heat slightly, then add squash blossoms and epazote. Cook for 4–5 minutes, stirring gently, until blossoms wilt but retain bright color.
Season with remaining salt and black pepper. Remove from heat promptly to avoid overcooking.
Serve immediately, garnished with additional fresh epazote if desired.
