Pat the pork loin dry, then season all sides evenly with salt, black pepper, and dried thyme. Let sit at room temperature for 15 minutes.
Heat 1 tbsp olive oil in a large skillet over medium-high heat. Sear the pork loin on all sides until golden, about 4 minutes per side. Transfer to a roasting pan.
In the same skillet, add remaining olive oil, onion, and garlic. Sauté over medium heat until the onion is soft and translucent, 3-4 minutes.
Add mixed berries, balsamic vinegar, brown sugar, and chicken broth to the skillet. Simmer over medium-low heat for 10 minutes, stirring occasionally, until the berries break down and the sauce thickens slightly.
