Bring a large pot of salted water to a rolling boil and cook farfalle pasta until al dente, about 12 minutes; drain and set aside, reserving 1/4 cup pasta water.
While pasta cooks, finely chop the shallot. Heat olive oil in a large skillet over medium heat, then sauté shallot until translucent, about 3 minutes.
Add salmon fillet to the skillet, cooking 2 minutes per side until just opaque; remove, flake with a fork, and set aside.
Reduce skillet heat to low, stir in heavy cream, pasta water, and lemon juice. Simmer for 4–5 minutes, stirring gently to thicken without boiling.
