Peel and cube the potatoes into 1-inch pieces. Boil them in salted water for 10-12 minutes until just fork tender, then drain thoroughly.
Heat oil in a large nonstick skillet over medium heat. Add the boiled potatoes and roast, flipping occasionally, until golden and crispy on all sides (about 8–10 minutes).
Transfer the crispy potatoes to a large mixing bowl and allow to cool for 2–3 minutes before adding other ingredients. This prevents wilting of fresh herbs.
Add the chopped red onion, tomato, cilantro, and pomegranate seeds to the bowl with potatoes.
Sprinkle the chaat masala, cumin powder, black salt, and red chili powder over the mixture. Drizzle in lemon juice, tamarind chutney, and green chutney. Stir gently to combine without breaking the potatoes. Serve immediately for best texture.
