Chop all vegetables and soak cashews in warm water for 10 minutes.
Heat oil in a large pan over medium heat. Add cumin seeds and let them sizzle for 30 seconds for aroma.
Add onions and sauté until light golden, about 3–4 minutes, then stir in ginger garlic paste and cook until raw aroma disappears.
Add tomatoes and season with turmeric, coriander, chili powder, and salt. Cook down until tomatoes are soft and oil begins to separate.
Blend soaked cashews with spinach and a splash of water to a smooth paste, then add to the pan; cook 2–3 minutes, stirring to prevent sticking.
Add potatoes and mixed vegetables. Cover and cook on medium-low heat for 10–12 minutes until veggies are fork-tender; stir occasionally and add 2–3 tbsp water if the pan dries.
Uncover, add garam masala, and cook uncovered for 2 minutes on low for flavors to mingle. Adjust salt and serve hot.
