Thick corn masa bases topped with beans, meat, lettuce, and salsa from street vendors are a classic. This family-friendly, protein-rich antojito is a fresh, satisfying everyday meal.
In a large bowl, mix masa harina with warm water and salt until a soft, pliable dough forms. Knead for 2-3 minutes for even hydration.
Divide the dough into 10 balls. Flatten each ball gently into thick disks about 4 inches wide, 1/2-inch thick.
Heat a dry skillet over medium heat. Cook each sope disk for about 2 minutes per side until lightly golden but still tender.
While still warm, pinch the edges of each sope upward with your fingers to form a rim, being careful not to crack the base.
Add vegetable oil to the skillet and heat over medium-high. Fry each sope for 60–90 seconds per side until the edges are crisp and bases lightly golden. Drain on paper towels.
Spread a generous layer of warm refried black beans over each sope base.
Top with shredded chicken, lettuce, a spoonful of salsa, and crumbled queso fresco. Serve immediately.
