Stunning marbled tea eggs with aromatic five-spice and soy flavor are a protein-packed snack. A healthy, family recipe ideal for clean eats and meal prep.
Place eggs in a saucepan, cover with water, and bring to a gentle boil over medium-high heat. Once boiling, reduce heat and simmer for 7 minutes.
Transfer eggs to a bowl of cold water. Once cool, gently tap each egg all over with the back of a spoon to crack the shells, but do not peel.
Return eggs to the pot. Add 4 cups fresh water, soy sauce, tea bags, five-spice powder, star anise, cinnamon stick, sugar, and peppercorns.
Bring the mixture to a boil, then reduce heat to low and simmer gently for 45 minutes, turning eggs occasionally to ensure even marbling.
Remove from heat and let eggs steep in the cooking liquid for at least 1 hour, or refrigerate overnight for deeper flavor and more pronounced marbling. Peel and serve chilled or at room temperature.
