Modern ice cream moon cakes with frozen, creamy filling are a fun twist on tradition. A family dessert that's a refreshing Mid-Autumn treat.
Scoop vanilla ice cream into 6 muffin liners, pressing a tablespoon of sweetened red bean paste into the center of each; freeze until very firm (about 1 hour).
In a microwave-safe bowl, whisk mochi flour, whole milk, sugar, salt, vanilla extract, and cornstarch until fully smooth.
Cover bowl with plastic wrap and microwave on high for 1 minute. Stir, then repeat microwaving and stirring twice more, for a total of 3 minutes. The mixture should become thick and sticky.
Cool mochi dough slightly, then dust a surface with cornstarch and roll dough out to about 1/8-inch thickness. Cut out 6 disks large enough to wrap each ice cream filling.
Working quickly, place each frozen ice cream ball onto a mochi disk, gather edges, and seal tightly. Transfer assembled cakes seam-side down into moon cake molds or muffin cups; freeze until set, at least 45 minutes before serving.
