Sweet potato candy combined with pineapple creates a tropical Mexican confection. This family-friendly treat is a naturally sweet, fruity candy with vibrant Mexican flavors.
Peel the sweet potatoes and cut them into 1-inch chunks for even cooking.
In a medium saucepan, combine sweet potato chunks, water, and cinnamon stick; bring to a boil over medium-high heat.
Reduce the heat to low, cover, and simmer for about 25–30 minutes until the sweet potatoes are very tender.
Discard the cinnamon stick. Add pineapple pieces, sugar, and lemon juice to the pot. Continue simmering uncovered, stirring occasionally, until the fruit mixture thickens and most moisture evaporates (about 30–40 minutes).
Mash the mixture with a potato masher or use an immersion blender for a smoother texture, then simmer an additional 5–10 minutes to concentrate the flavors and achieve a sticky consistency.
Transfer mixture to a lightly greased tray or mold. Cool completely to room temperature, then refrigerate for at least 1 hour until set before cutting into pieces.
