Bubbling queso fundido melts cheese with chorizo and peppers for a rich, shareable Tex-Mex appetizer. Scooped with warm tortilla chips, this protein-rich dip is a family gathering essential.
Preheat your oven to 400°F. Set out an 8-inch cast iron skillet for even heat retention.
Remove the casing from the chorizo. In the skillet over medium heat, cook the chorizo for about 4–5 minutes, breaking it into crumbles and rendering fat.
Add the diced poblano pepper and chopped onion to the skillet. Sauté for 3–4 minutes until softened—do not brown.
Remove excess fat if needed. Reduce heat to low and evenly layer both cheeses over the chorizo mixture.
Transfer the skillet to the oven. Bake for 10–12 minutes, until the cheese is completely melted and bubbling around the edges.
Carefully remove from the oven and top with fresh cilantro. Season with salt and black pepper; serve immediately with warm tortilla chips.
