Drain the tofu well and gently pat dry with a paper towel. Cut into 1-inch cubes and set aside.
In a mixing bowl, combine the minced pork, soy sauce, sesame oil, white pepper, and salt. Stir the mixture in one direction until it becomes sticky and uniform.
Fold the tofu cubes and minced scallion whites gently into the pork mixture, being careful not to break up the tofu.
