Soft steamed custard buns oozing with golden egg custard are a beloved treat. A family-friendly snack with rich, fresh custard flavor.
In a mixing bowl, combine all-purpose flour, instant yeast, and 2 tbsp sugar. Gradually pour in warm whole milk (about 100°F) and stir until a shaggy dough forms; knead for 8–10 minutes until smooth and elastic.
Cover the dough with a damp cloth and let it rise in a warm spot until doubled in size, about 1 hour.
For the custard, whisk together egg yolks, sweetened condensed milk, cornstarch, vanilla extract, and a pinch of salt in a saucepan. Stir over low heat, add butter, and cook, whisking continuously, until thickened to a smooth, shiny texture. Cool completely before using.
Punch down the risen dough and divide into 6 equal portions. Flatten each piece, keeping the center thicker. Spoon a heaping tablespoon of cooled custard into the center, then pinch to seal the bun tightly.
Place buns seam-side down on parchment squares. Let rest 20 minutes covered, then steam over boiling water (high steam) for 10–12 minutes. Turn off the heat, let stand 2 minutes before removing the lid to prevent wrinkling.
