Heat a dry skillet over medium heat, lightly toast the guajillo and ancho chiles for 30–60 seconds per side until fragrant but not burned.
Place toasted chiles in a bowl, cover with hot water, and let them soak for 10 minutes until softened.
Blend the softened chiles with garlic, 1/4 cup onion, chicken broth, cumin, oregano, salt, and black pepper until smooth.
Heat 1 tbsp oil in a saucepan over medium heat; pour in the blended sauce and simmer, stirring, for 10-12 minutes until thickened and the flavors deepen.
Lightly fry each corn tortilla for about 10 seconds per side in the remaining oil over medium-high heat, then place on a plate lined with paper towels.
Preheat oven to 375°F (190°C). Dip each tortilla in the warm red sauce, fill with shredded chicken and some chopped onion, roll tightly, and arrange seam-side down in a baking dish.
Pour the remaining red sauce evenly over the enchiladas and sprinkle cheese over the top.
Bake for 18–22 minutes, uncovered, until the cheese is melted and bubbly. Let stand for 5 minutes before serving.
