Hearty beef stew simmered with potatoes, carrots, and onions in a rich gravy is a family comfort classic. This high protein, freezer-friendly meal is deeply satisfying on cold evenings.
Pat beef cubes dry with paper towels and toss with flour, salt, and half the pepper until well coated.
Heat olive oil in a large Dutch oven over medium-high heat. Brown beef in batches (don’t overcrowd), searing each side for 2–3 minutes, then transfer to a plate. Do not wipe out the pot.
Add chopped onions and celery to the same pot; sauté over medium heat until the onions are translucent, about 5 minutes. Stir in garlic and tomato paste, cooking for 1 more minute until fragrant.
Return the browned beef and accumulated juices to the pot. Add beef broth, Worcestershire sauce, bay leaf, dried thyme, and remaining pepper. Bring to a boil, then reduce heat to low. Cover and simmer gently for 1.5 hours, stirring occasionally.
Add potatoes and carrots. Stir, cover, and continue simmering for 45–60 more minutes, or until the meat and vegetables are fork-tender and the stew has thickened.
Remove bay leaf, skim any excess fat, and adjust seasoning with salt to taste. Ladle into bowls and top with fresh parsley before serving.
