Trim green beans and cut into 2-inch pieces. Mince garlic and chop scallions finely for quick flavor infusion.
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add green beans; stir-fry for 4-5 minutes, stirring constantly, until blistered and lightly crisp. Remove beans and set aside.
Add the remaining oil and minced garlic to the pan. Sauté for 30 seconds on medium heat to release the aroma, then add minced pork. Stir-fry until the pork is evenly browned and small crumbles form.
