Wash, peel, and dice the potatoes into 1-inch cubes. Blanch spinach leaves for 2 minutes in boiling water, then transfer to ice water to preserve the vibrant green color.
In a large skillet, heat the vegetable oil over medium heat. Add cumin seeds and let them sizzle for 30 seconds until fragrant.
Add chopped onion, garlic, and ginger to the pan. Sauté over medium heat for 3-4 minutes, stirring to ensure the mixture turns golden and does not burn.
Add diced tomato, turmeric, coriander powder, and salt. Cook for 5 minutes, stirring occasionally, until tomatoes break down and the mixture thickens.
Add blanched spinach to the pan and blend the mixture with an immersion blender to create a smooth gravy. Add the potato cubes and simmer for 15 minutes over medium-low heat, until the potatoes are tender.
Sprinkle garam masala and black pepper into the gravy. Simmer for another 3 minutes. Stir well, check seasoning, then serve hot.
