Heat sesame oil in a large skillet over medium heat until shimmering but not smoking.
Add mustard seeds and let them crackle, then immediately add chana dal, urad dal, and peanuts. Sauté for 2-3 minutes until the dals and peanuts are golden.
Reduce heat to low and add dried red chilies and curry leaves, stirring constantly to avoid burning for about 30 seconds.
Add turmeric powder, asafoetida, and tamarind paste; cook for 1 minute, stirring well to blend. Add jaggery and salt, mixing until dissolved.
Gently fold in the cooked rice, ensuring the spice blend coats each grain evenly. Heat through for 2-3 minutes on low, then serve warm.
