Marinate the cleaned pomfret fish with half of the turmeric powder, salt, and lemon juice. Let it sit for at least 15 minutes to allow flavors to infuse.
Heat vegetable oil in a deep pan over medium heat. Add mustard seeds and allow them to sizzle for 20 seconds before adding curry leaves for an aromatic base.
Add chopped onions and sauté on medium heat until they turn golden brown. Stir in grated ginger, minced garlic, and green chilies, and cook for 2-3 minutes to develop the base flavor.
Mix in diced tomatoes, remaining turmeric powder, red chili powder, coriander powder, and cook until tomatoes soften and oil starts to separate, about 6 minutes on medium-low.
