Braised duck and wheat noodles are served in a fragrant, star anise-scented broth. This protein-rich family soup showcases tender duck meat with comforting, aromatic depth.
Pat duck leg quarters dry and season with salt. In a large pot over medium-high heat, sear duck skin-side down for 5–7 minutes until golden and much of the fat has rendered.
Add sliced ginger, garlic cloves, and chopped onion to the pot. Sauté for 2–3 minutes to release aromas, scraping the bottom bits.
Add carrots, celery, star anise, whole peppercorns, shiitake mushrooms, soy sauce, Shaoxing wine, and sugar. Pour in 8 cups water to cover and bring to a boil.
Reduce heat to a gentle simmer, cover, and braise for 2 hours, occasionally skimming off excess fat and impurities for a clean broth.
Remove duck legs and let cool slightly. Shred meat off the bone, discarding skin and bones. Return shredded duck to broth.
Cook wheat noodles in a separate pot according to package instructions. Drain and portion into serving bowls.
Taste broth and adjust seasoning with more salt or soy sauce as needed. Ladle hot broth with duck and vegetables over noodles.
