Rich pork belly zongzi with savory meat and egg yolk are a Dragon Boat Festival classic. A high protein, family tradition wrapped in bamboo leaves.
Rinse and soak glutinous rice in water for at least 4 hours, then drain thoroughly.
Cut pork belly into 1-inch cubes and marinate with soy sauce, dark soy sauce, Shaoxing wine, white pepper, and sugar for 1 hour.
Soak shiitake mushrooms until softened, then slice; rinse and soak dried shrimp for 30 minutes.
Blanch bamboo leaves in boiling water for 5 minutes, then pat dry and set aside.
Assemble zongzi: lay two bamboo leaves overlapping, place a portion of rice, add pork, mushroom, dried shrimp, and a salted egg yolk, cover with more rice, and fold tightly. Tie securely with kitchen twine.
Repeat assembling until all ingredients are used.
In a large pot, arrange zongzi and fill with water to cover. Simmer gently for 3 hours, making sure to keep the water level above zongzi throughout cooking.
Remove cooked zongzi and let rest for 10 minutes before serving. Brush with sesame oil for fragrance.
