Heat the vegetable oil in a large, heavy skillet over medium heat. Once hot, add the mustard seeds and let them sizzle and pop for about 30 seconds.
Add curry leaves and sliced green chilies carefully (stand back, as they may splatter). Fry for 1 minute until fragrant, stirring to release aromas without burning.
Stir in the cashew halves and peanuts. Roast on medium-low heat, stirring regularly, until golden and crisp, about 3-4 minutes.
Sprinkle in the turmeric powder, then immediately add the poha (flattened rice flakes). Gently toss and roast for 4-5 minutes, ensuring the poha crisps up without browning. Stir continuously for even toasting.
Add shredded coconut, raisins, and potato sticks. Continue tossing for another 2-3 minutes on low heat for even distribution.
