Flaky sesame pancakes with golden, crispy layers and nutty aroma are a Northern Chinese classic. A vegetarian, family breakfast with fresh, satisfying crunch.
In a mixing bowl, combine flour and salt. Pour the hot water gradually while stirring with chopsticks or a spatula until a shaggy dough forms.
Knead the dough on a lightly floured surface for 6–8 minutes until smooth and elastic. Cover with plastic wrap and let rest for 30 minutes to hydrate.
Divide the dough into 2 portions. Roll each portion into a thin rectangle. Brush surface evenly with sesame oil and sprinkle with scallions and sesame seeds.
Roll each rectangle tightly from the long edge into a log. Coil each log into a spiral, tuck the end under, then flatten gently with your palm.
Roll each spiral into a 7-inch pancake. Heat neutral oil in a skillet over medium heat. Pan-fry the pancakes on each side for 3–4 minutes until crisp, golden, and flaky, pressing gently for even cooking. Slice into wedges and serve hot.
