In a large mixing bowl, combine ground pork, finely chopped chives, minced green onion, and the whole egg. Mix thoroughly until the filling is cohesive.
Add soy sauce, sesame oil, grated ginger, minced garlic, salt, black pepper, and water. Stir the mixture in one direction until sticky and homogeneous; this ensures proper texture.
Lay out the dumpling wrappers and spoon 1 heaping tablespoon of pork mixture into the center of each. Moisten the edges with water, fold, and pleat to seal, pressing out air bubbles as you work.
