A tender Easter lamb roast with rosemary and garlic is a high protein, Mediterranean-inspired family holiday tradition. This elegant centerpiece celebrates spring with rich, herbaceous flavors.
Remove the lamb from the refrigerator 1 hour before roasting to allow it to come to room temperature.
Preheat the oven to 425°F. Pat the lamb dry and make small incisions all over with a sharp knife.
Finely chop 4 rosemary sprigs and 5 garlic cloves. Combine with olive oil, salt, and black pepper to make a paste.
Rub the herb mixture thoroughly over the lamb, pushing some into the incisions. Squeeze lemon over the meat and place halved lemon, remaining garlic cloves, and rosemary sprigs in the roasting pan.
Roast the lamb at 425°F for 20 minutes, then reduce oven to 350°F and continue roasting for 1 hour 30 minutes, until the thickest part reaches 135°F for medium-rare. Rest covered with foil for 20 minutes before carving.
