In a large pot over medium heat, add 8 cups water, chicken breasts, bay leaves, and salt. Bring to a gentle boil, skim any foam, and simmer covered for 30 minutes to create the broth.
Remove chicken breasts and shred using two forks. Discard bay leaves and return shredded chicken to the pot.
Add sliced carrots, diced potatoes, green beans, chickpeas, chopped onion, and garlic. Cook uncovered over medium-high heat for 15 minutes, stirring to prevent sticking.
