Slice the kielbasa into 1/2-inch rounds. In a large, heavy-bottomed pot over medium heat, melt butter until foaming subsides.
Add the sliced onions and cook for 4–5 minutes, stirring frequently, until softened and beginning to brown.
Stir in the sliced apples, cooking for another 2 minutes until just softened.
Add the sauerkraut, brown sugar, black pepper, and caraway seeds. Mix thoroughly to ensure even seasoning.
Nestle the kielbasa slices into the sauerkraut mixture, reduce heat to low, cover, and simmer for 30–35 minutes, stirring once or twice to prevent sticking.
Uncover and increase heat to medium for the last 5 minutes of cooking, evaporating excess liquid if needed. Serve hot with your favorite sides.
