Simple spring onion oil noodles with fragrant scallion-infused oil are a quick breakfast. A vegetarian, family recipe with fresh, aromatic flavor.
Bring a large pot of water to a boil, add the dry wheat noodles, and cook according to package instructions until just tender.
While the noodles cook, heat neutral oil in a skillet over medium-low heat. Add the sliced spring onions and gently fry, stirring often, until crisp and fragrant but not burned—about 5–7 minutes.
Remove the spring onions from the oil and set aside. Pour the scallion-infused oil over the drained noodles.
In a small bowl, stir together soy sauce, dark soy sauce, sugar, and salt. Pour this seasoning mixture over the noodles and toss until evenly coated.
