Golden leek and egg pies with a savory, vegetarian filling are a classic comfort food. A protein-rich, fresh family recipe with aromatic leek flavor.
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
Trim and slice leeks thinly. Heat olive oil in a large skillet on medium; sauté leeks with a pinch of salt for 8–10 minutes until very soft and fragrant. Cool slightly.
Beat eggs in a large bowl. Reserve 1 tbsp egg for brushing. Add ricotta, crumbled feta, cooled leeks, black pepper, chopped dill, and nutmeg. Mix gently until filling is uniform.
Unfold puff pastry sheets on a lightly floured surface. Cut each into three rectangles. Spoon filling evenly onto half of each rectangle, leaving a margin around the edge.
Fold pastry over filling and crimp edges with a fork. Brush tops with the reserved egg beaten with milk. Bake for 25–30 minutes, or until the pies are golden brown and puffed. Serve warm.
