Pat the beef chuck roast dry and cut into large chunks for even cooking.
Place the beef, sliced onion, whole garlic cloves, and bay leaves into a large slow cooker or Dutch oven.
In a separate bowl, mix oregano, cumin, paprika, chipotle in adobo, salt, and black pepper. Rub this spice blend thoroughly onto the beef and vegetables.
Pour the beef broth over all the ingredients, cover tightly, and cook on LOW heat for 6 hours (or in the oven at 275°F).
