Warm the milk and mix in saffron strands to infuse the flavor; allow to stand for 10 minutes.
Bloom the yeast by dissolving it in warm water with a pinch of sugar; let it activate until frothy, about 10 minutes.
In a large bowl, combine all-purpose flour, sugar, salt, and the activated yeast. Add the saffron-infused milk and beaten egg, then knead to form a smooth dough.
Work in the melted unsalted butter gradually, kneading until the dough is soft, elastic, and slightly sticky. Cover and let rise in a warm place for about 1 hour, or until doubled in size.
Preheat oven to 375°F (190°C). Divide dough into 6 balls, roll each into a disc about 1/4 inch thick. Place on a baking sheet lined with parchment; prick the surface lightly with a fork.
Brush the tops with a little milk, bake for 10–12 minutes until puffed and lightly golden, rotating the tray halfway for even coloring. Cool slightly before serving.
