Green beans stewed in tomato sauce are a simple, classic vegetarian Italian side. This fresh mediterranean family dish is healthy, clean eats, and a staple of everyday Italian home cooking.
Trim the ends off the green beans and cut in half if large; set aside.
Heat olive oil in a large skillet over medium heat. Add diced onion and sauté until translucent, about 3 minutes.
Add minced garlic and cook for 1 minute, stirring to avoid burning.
Stir in the chopped plum tomatoes, salt, and pepper. Let the sauce simmer on medium-low heat for 8 minutes until tomatoes break down.
Add green beans and cover the skillet. Cook on medium-low for 15–18 minutes, stirring occasionally, until beans are tender and sauce thickens.
Uncover, stir in torn fresh basil, taste, and adjust seasoning if needed. Serve warm.
