Crumbly Cantonese walnut cookies are a traditional festive treat with rich nutty flavor. A classic family recipe enjoyed during holidays and celebrations.
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a bowl, whisk together all-purpose flour, baking powder, baking soda, and salt for even leavening.
In a separate large bowl, cream the softened butter and sugar together until light and fluffy, then beat in the egg and vanilla extract for even texture.
Gradually mix in the flour mixture to the wet ingredients, stirring just until combined; do not overmix. Fold in the chopped walnuts and vegetable oil until evenly distributed.
Scoop about 1 tablespoon of dough per cookie, shape into balls, and gently flatten. Place onto the baking sheet, leaving about 2 inches apart. For an authentic look, gently press a walnut piece on top of each.
Bake in the preheated oven for 15–18 minutes, rotating the tray halfway through for even browning. Cookies should be lightly golden at the edges. Cool on the tray for 5 minutes before transferring to a wire rack to cool completely.
