Preheat your oven to 350°F (175°C) and lightly butter a 2-quart baking dish for even nonstick coverage.
In a large mixing bowl, toss the prepared fruit with lemon juice, vanilla extract, and half of the cinnamon and salt to coat evenly; spread the fruit in the baking dish.
In a separate bowl, combine oats, flour, brown sugar, remaining cinnamon and salt. Add cold butter and use your fingertips or a pastry cutter to blend until the mixture forms coarse crumbs.
Sprinkle the oat topping evenly over the fruit layer, making sure to cover the entire surface for even browning.
