Pyaz Kachori Breakfast is an iconic Indian snack that delivers satisfying crunch and authentic spiced flavors. This vegetarian treat is a family favorite that's perfect for tea time and casual entertaining.
In a large bowl, combine all-purpose flour, 2 tbsp ghee, and 0.5 tsp salt. Rub the ghee into the flour and slowly add water to form a soft, pliable dough. Cover and set aside for at least 30 minutes.
Heat 2 tbsp ghee in a pan over medium heat. Add cumin and fennel seeds; let them sizzle for 30 seconds. Stir in chopped onions and sauté until translucent, about 8 minutes.
Add coriander powder, turmeric, red chili powder, amchur, and salt to the onions. Cook the filling over low heat until the spices are aromatic and the mixture is almost dry. Let it cool completely.
Pinch off equal portions of dough and flatten each into a disc. Place a spoonful of spiced onion filling in the center, gather the edges, and pinch to seal. Gently flatten to form thick patties.
Heat oil in a deep pan to 325°F (medium-low). Fry the kachoris in small batches, turning occasionally, until golden brown and crisp, about 7–8 minutes per batch. Drain on a rack and serve hot.
