Hunan steamed fish head smothered in fresh chili paste is a dramatic, flavorful dish. A high protein, fresh recipe perfect for adventurous family meals.
Clean the fish head thoroughly, split it open without cutting through, and pat dry. Place it on a heat-safe plate, skin side up.
Rub both sides of the fish head with Shaoxing wine, then sprinkle with salt and white pepper. Marinate for 10 minutes.
During marination, finely chop the fresh red chili peppers, ginger, and 2 scallions. Mix with soy sauce and sugar to make the chili paste.
Spread the chili paste evenly over the fish head, layering it thickly. Reserve remaining scallions for garnish.
Steam the fish head over high heat in a steamer for 18–20 minutes (water bubbling vigorously for even cooking). Do not open lid during cooking to preserve moisture.
Meanwhile, heat vegetable oil in a small pan until shimmering. Once the fish is done, carefully drain any excess liquid from the plate.
Pour the hot oil evenly over the top of the fish and chili paste to sizzle the aromatics. Garnish with cilantro and the remaining scallions. Serve immediately.
