Prep ingredients: Dice the carrot, onion, and green bell pepper into small, even pieces for quick sautéing.
Heat 1 tbsp of vegetable oil in a large skillet over medium-high. Add the onion, carrot, and bell pepper. Sauté for 2-3 minutes until softened and fragrant.
Stir in the frozen peas and cook for another minute. Push the vegetables to one side of the pan.
Beat the eggs, pour into the empty space, and scramble gently, controlling heat to avoid overcooking. Once just set, break up the eggs and mix with the vegetables.
Add the leftover rice, breaking up any clumps. Pour in soy sauce, salt, and pepper. Add the remaining oil. Fry for 5-6 minutes over medium-high heat, stirring frequently, until the rice is hot, lightly toasted, and evenly colored.
