Aromatic chrysanthemum wine chicken is a Double Ninth Festival specialty with floral, savory flavor. A high protein chicken dish for family celebration.
Rinse the chicken pieces under cold water and pat dry; trim excess fat if needed.
In a large pot, heat sesame oil over medium heat. Add ginger slices and scallions, and stir-fry until aromatic, about 1 minute.
Add the chicken pieces; sear each side until lightly golden and chicken skin renders fat, about 4–5 minutes per side.
Pour in chrysanthemum wine and soy sauce. Mix well, then add sliced mushrooms, salt, and white pepper. Stir thoroughly to combine.
Reduce heat to low, cover, and let the chicken simmer for 35–40 minutes until tender, occasionally basting with sauce.
Uncover, scatter fresh chrysanthemum petals evenly over chicken, and simmer for an additional 5 minutes. Serve hot, garnished with extra scallion if desired.
